Edamame dip with bacon bits


HOLY COW can you tell how much this was a success?! Here is the proof from Jon himself
Greedy man : ) He was shoveling this in his mouth lol.
So I had I bag of frozen edamame in the freezer in their shells so it was a bit tedious to shell them but luckily they sell these babies already shelled. We like them whole as a healthy snack.
I had made baked potatoes the day before as a side dish and had one left over that was still whole, so... I threw that in too 8D Crazy Kelly on a rampage in the kitchen. But I knew the potato would add a nice creamy thickness to the dip, it wasn't a random decision lol


1 cup of edamame beans 
1/2 baked potato skin on (hey I'm lazy and it has vitamins too!)
seasoning (salt, pepper, onion and garlic powder, and dried rosemary and thyme)
1/3 cup Olive oil
2 cloves of crushed garlic
1 tbsp parmasean cheese
huge handfull of bacon bits
I used my mini food processor to turn this into a nicely textured dip.
Now that its almost full cap it and keep grinding until it reaches your desired consistency.

Spoon into a nice bowl and top with your bacon bits!
Enjoy Because we sure did! Oh and if you don't finish it all in one sitting (we didn't) just refrigerate it. It WILL harden because the fat from the oil will solidify so just heat it up in the microwave for 45 seconds or until a small ring of bubbles starts to form around the edges. Then mix it up and top with more bacon bits if you would like.
